Fishing with Westpac

It’s been a very strange and difficult season with lots of rain, wind and gale warnings. We haven’t had a summer, other than three days! After last weeks’ very heavy rain, we had 126 mm in less than 12 hours, with the dams are still overflowing. Fishing has been unpredictable but with an excellent day last Sunday.

But we had a very nice team onboard yesterday with Westpac’s Asia Pacific management team for a fishing trip.

The catch rate was pretty good with a dozen bonito and a half box of reef fish. Speaking of bonito, we had some for dinner and they were excellent. This is what we do:
Fillet the fish, heat up a smoking box, cover the fillets with a little salt, chilli, brown sugar and cook for 10 to 15 minutes. It is just excellent!
