my tarwhine

It’s been a difficult season since the summer we didn’t have. But we had a good day today!

The team did well, despite a little sea sickness. We ended up with a box of mixed reef fish, i.e. tarwhine, red rock cod, leather jacket, wrasses, blue morwong, flathead and trevally. We particularly like tarwhine! They are like a bream but better for the table. They like prawns; we often peel the prawns to make it as easy and attractive as possible.
Tarwhine is a delicious fish usually cooked whole. They are a much prized and highly rated food fish. We like them best wrapped up in foil with our favourite Asian or north African spices.
Onboard, we clean the fish and put it on ice to preserve the freshness until you get home and are ready to cook. It can be refrigerate for up to 3 days or freeze whole fish for up to 6 months, and fillets for up to 3 months.

Tarwhine has a mild, sweet flavour, low oiliness and moist, soft-medium flesh. So steam, poach, pan-fry, bake, grill or barbecue. Enjoy and with a glass of white wine!
