Welcome back to Australia, Valentin. It was nice to see you onboard today and you didn’t miss the opportunity to catch the fish of the day. It is a Gummy Shark and this one is 1.15 metre and came in at about 4.2 kilo.
Gummy shark is a high quality fish suitable for all kinds of dishes. Remove skin and bones until you have white firm fillets of the fish. Then cut into fish fingers or suitable pieces.
We like them prepared very simply, like:
Heat oil in a frypan
Dust the fish pieces in flour then dip them
in an egg wash and coat in bread crumbs.
Then cook until just golden brown but do not overcook.
Serve with a green salad, perhaps garlic bread and a glass on white wine.
